About Burdock

Thin and Long! The King of Root Vegetables Only Japanese People Ate

Burdock is a vegetable where you eat the root of a plant in the daisy family. It has a long, thin shape, a unique crunchy texture, and a rich aroma. Around the world, people used it as a medicinal herb. But for a long time, Japanese people were the only ones who ate its root as a vegetable! Today, people eat it not only in Japan, but also in some Asian countries like Taiwan and South Korea.

Origin of Its Kanji Name

In Kanji, Burdock is written as 「牛蒡」. Long ago, people in China used the character "牛" (cow) to mean "big." Burdock leaves looked like a plant called "蒡," but they were much bigger! That is why it got the name "牛蒡."

In Season and Types

You can get Burdock all year long because it keeps well. But it has two main seasons each year!

  • Autumn to Winter Season (November to February): This is the most common season for Burdock. Long-root types like "Takinogawa Burdock" are famous. Some grow to be 2 to 3 centimeters thick and about 1 meter long! They have a strong aroma and are great for kinpira or simmered dishes.
  • Spring to Early Summer Season (April to June): The Burdock sold during this time is called "Shin-Burdock" (New Burdock). It looks whiter, shorter, and thinner than the autumn and winter ones. It is soft and has less earthy smell, so you can use it in salads or Yanagawa hot pots too!
  • Waka-Burdock (Leaf Burdock): People grow this young Burdock mostly in the Kansai region. You can even eat its leaves and stems!

Rich Nutrients and Health Benefits

Burdock is known as a vegetable with a lot of dietary fiber, even among other vegetables!

  • Dietary Fiber: Burdock has a great balance of two fibers. It has insoluble fiber that helps your tummy move well, and soluble fiber that keeps your blood sugar from going up too fast. It helps keep your belly healthy and happy!
  • Polyphenols: The strong flavor in Burdock comes from polyphenols. They act as antioxidants that help protect you from getting sick or aging. Most polyphenols are near the skin, so try not to peel off too much! It is best to scrub it gently with a scrub brush.
  • Minerals and Oligosaccharides: It also has plenty of minerals like potassium, plus oligosaccharides that feed the good bacteria in your belly!

For a long time in Japan, people ate Burdock to bring good luck!

  • New Year's Day: A famous New Year dish is "Tataki Burdock," made by pounding Burdock open. Because Burdock grows its roots deep into the ground, people eat it to wish for "a long, peaceful life" and a "strong, well-rooted family."
  • Kinpira: The name "Kinpira Burdock" comes from Kinpira, a legendary hero known for being super strong and never getting sick! People eat it with a wish to stay healthy and full of energy.
