Cucumber is a plant in the gourd family. It is a vegetable with a juicy crunch and a fresh smell. About 95% of Cucumber is water! It helps cool your body down when it is hot, so it is great for stopping summer tiredness. You usually eat Cucumber raw, but you can also use it in stir-fries and soups.

How Cucumber Got Its Name

It is said that the origin of Cucumber is the foothills of the Himalayas in India. It came to Japan through China during the Heian period.

  • Cucumber: When a Cucumber gets fully ripe, it turns yellow, so long ago it was called "yellow melon" (kuri). It is said that this name gradually changed into the "Cucumber" we use today.
  • Bitterness: Cucumber has a bitter component called cucurbitacin, which is special to plants in the gourd family. This component is said to help you produce spit and stomach juices, which makes you feel hungrier.

Season and Types

Although Cucumber is available all year round thanks to advances in farming technology, its real season is summer.

  • In Season: They are harvested the most during the summer months from May to September. Cucumber grown outdoors during this time is said to have more vitamin C than the ones grown in greenhouses.
  • Main Types:
    • White-spine type: This type makes up most of the Japanese market. It has a bright green color, thin skin, and a nice crunchy feel. It is great for eating raw!
    • Black-spine type: People used to grow a lot of these in southwestern Japan, but there are very few now. It has thicker skin and is great for pickles.
    • Kaga Futo Cucumber: This is a traditional vegetable from Ishikawa Prefecture. It is a huge Cucumber that can be over 20 centimeters long and weigh more than 1 kilogram! People use it in cooked dishes and stir-fries.

Cucumber is often thought to be a "vegetable with no nutrients," but it actually contains important nutrients.

  • Guinness World Record: Cucumber is listed in the Guinness World Records as the "World's Lowest-Calorie Fruit". Because it is so low in calories, people often misunderstand it as having "no nutrients."
  • Potassium: Most of Cucumber is water, but it has quite a bit of potassium. Potassium makes you pee more, which helps wash out extra salt from your body. This helps reduce swelling and prevent high blood pressure.
  • Vitamins K and C: Cucumber also contains vitamin K and vitamin C. When you turn Cucumber into rice bran pickles, it gets even more vitamin B1!
